They originated in Central and South America, more specifically in the Peruvian highlands and Mexico. They were introduced in Europe by Spanish explorers returning from the New World, but it was not until the XIX century that they were consumed as vegetables.
They are not only rich in fibre and minerals but also in vitamins (Provitamin A, group B Vitamins and vitamin C). For this reason, they are considered one of the main products when dieting.
