RECIPE BOOK LOS GALLOMBARES: GREEN ASPARAGUS TARTAR WITH FRESH SALMON, IN COLLABORATION WITH FLATI RESTAURANT
This is an easy to prepare recipe and it will take you less than 40minutes.
INGREDIENTS FOR 4 PEOPLE
500 gr. Green asparagus
50 gr. Pine nuts
2 Oranges & 1 lemon
Salt & pepper
300 gr. Fresh salmon
Extra virgin olive oil
1 Ginger root
First of all, we need to blanch the asparagus in boiling water with salt for at least 10 minutes after reaching boiling temperature.
Then, cut asparagus into small pieces and also the salmon.
Put it all together in a bowl and season both with grated ginger, olive oil, the orange and lemon juice, salt and pepper.
Next, roast the pine nuts in a frying pan for a couple of minutes and add them to the tartar. Finally, serve it with the help of a mould and decorate it to taste.
